How to Pick Shrimp

You can use fresh or thawed frozen shrimp for this recipe. If you’re using fresh shrimp, remove the shells and lightly score down the back with a knife to remove the veins. This gives you a cleaner taste of shrimp and creates a nice fanned-out look when it’s cooked.

Ingredient Swaps

If you’re not a fan of zucchini, you can use roasted and shredded spaghetti squash instead.

Garlicky Shrimp

Instructions

PREPPING THE INGREDIENTS: 

  1. Mix all the ingredients for the shrimp in a bowl, cover with plastic wrap, and place in the fridge while you prepare the rest of the dish.
  2. Spiralize the zucchini into thin strands and set aside.
  3. Combine the garlic, kale, basil, extra-virgin olive oil, lemon juice, pepitas, Parmesan cheese, hemp seeds, and salt and pepper to taste in the food processor and blend until smooth. You may add water to help it blend. Set aside.

COOKING THE SHRIMP: 

  1. Remove crisper plate from the air fryer basket.
  2. Select the Preheat function, adjust temperature to 450°F, then tap Start/Pause.
  3. Spray the preheated basket with a light layer of oil spray, then add in zucchini noodles.
  4. Carefully place crisper plate into the basket on top of the zucchini noodles.
  5. Place the shrimp onto the crisper plate.
  6. Select the Air Fry function, adjust temperature to 450°F and time to 12 minutes, then tap Start/ Pause.
  7. Flip shrimp after 3 minutes and cook for 4 minutes.
  8. Remove shrimp from the air fryer when there is 5 minutes left and carefully take out the crisper plate with a kitchen towel or tongs. Return the basket to the air fryer and continue cooking.
  9. Remove the zucchini noodles and place them in a large bowl.

ASSEMBLE: 

  1. Spoon about 2 tablespoons of the pesto onto the zucchini noodles and toss to coat.
  2. Plate the zucchini noodles and lay the shrimp on top. Serve with more lemon and Parmesan cheese, if desired.

Quick Tip: The longer you marinate the shrimp, the better it’ll taste. You can marinate the shrimp a day in advance or cook it after 15 minutes.
