Walnut Raisin Pumpkin Bread

Ingredients

  • 1⅔ cup all-purpose flour

  • 1½ cup sugar

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ teaspoon salt

  • ½ teaspoon baking powder

  • 2 large eggs, room temperature

  • 1 can pumpkin puree (15 ounces)

  • ½ cup canola oil

  • ½ cup water

  • ½ cup chopped walnuts

  • ½ cup raisins

  • ½ cup chocolate chips

Items Needed

  • One 9 x 4.5-inch loaf pan

Directions

  1. COMBINE flour, sugar, baking soda, cinnamon, nutmeg, salt, and baking powder together in a bowl.

  2. COMBINE eggs, pumpkin puree, canola oil, and water in a separate bowl.

  3. COMBINE the dry ingredients with the wet ingredients, then gently fold in walnuts, raisins, and chocolate chips.

  4. SELECT the Bake function on the Cosori Air Fryer Toaster Oven, set time to 1 hour and 10 minutes, then press
    Start/Cancel to preheat.

  5. POUR the batter into a 9 x 4.5-inch loaf pan.

  6. INSERT the wire rack at low position in the preheated air fryer toaster oven, then set the loaf pan on the rack. Press Start/Cancel.

  7. REMOVE when done, then let it rest for 10 minutes before transferring to a wire rack to cool before serving.

Vegan Coconut Milk Cupcakes

  • ¾ cup all-purpose flour, sifted 

  • 2¼ teaspoons baking powder

  • ¼ teaspoon salt 

  • 6 tablespoons granulated sugar

  • 2 tablespoons coconut oil, melted

  • ¾ cup full-fat coconut milk, unsweetened 

  • 1 tablespoon water

  • ¼ teaspoon vanilla extract

  • ½ teaspoon coconut extract

  • ½ teaspoon white distilled vinegar

  • Grated coconut, for sprinkling

Directions

  1. COMBINE flour, baking powder, salt, and sugar in a mixing bowl.

  2. WHISK in coconut oil, coconut milk, water, vanilla extract, coconut extract, and vinegar until smooth. 

  3. INSERT wire rack at low position in the Cosori Air Fryer Toaster Oven.

  4. SELECT the Bake function on the air fryer toaster oven, set time to 23 minutes and temperature to 350°F, then press Start/Cancel to preheat. 

  5. POUR batter into the muffin pan with cupcake liners, then place the pan on the wire rack in the preheated air fryer toaster oven. Press Start/Cancel.

  6. SPRINKLE grated coconut on top after 5 minutes of cooking. 

  7. REMOVE when done, let cool for 15 minutes, then serve. 

Summer Strawberry Crumble

Fruit Filling

  • 2 pounds strawberries, halved

  • ½ lemon, juiced and zested

  • 1 tablespoon orange zest

  • 8 basil leaves, chopped

  • A pinch of sea salt

  • 2½ tablespoons cornstarch

  • ¼ cup sugar

Crumble

  • ¾ cup sugar 

  • ¾ cup unsalted butter, room temperature

  • 1¼ cups rolled oats

  • 1¼ cups almond flour

  • 1 egg yolk 

Items Needed

  • One 8 x 8-inch baking dish

Directions

  1. COMBINE all fruit filling ingredients, then let them sit for
    5 minutes.

  2. COMBINE all ingredients for the crumble in a separate bowl and mix well.

  3. ADD the filling to the 8 x 8-inch baking dish, then layer the crumble on top of the strawberries.

  4. INSERT the wire rack at low position in the Cosori Air Fryer Toaster Oven. 

  5. SELECT the Bake function, set time to 40 minutes, then press Start/Cancel to preheat.

  • 1 cup cake flour

  • 3 tablespoons milk

  • 2 teaspoons vanilla extract

  • 6 egg whites

  • ¼ cup granulated sugar

  • Powdered sugar, for sprinkling

Items Needed

  • One 10 x 3-inch cake tin

Directions

  1. WHISK egg yolks and powdered sugar together.

  2. MIX flour and baking powder into the batter until thickened. 

  3. MIX in milk, vegetable oil, and vanilla extract, whisking until well combined.

  4. INSERT wire rack at low position in the Cosori Air Fryer Toaster Oven. 

  5. SELECT the Bake function on the air fryer toaster oven, set time to 28 minutes, then press Start/Cancel to preheat.

  6. WHISK egg whites in a separate bowl or a stand mixer until frothy. Add granulated sugar and whisk again until egg whites have formed stiff peaks.

  7. FOLD egg whites gently into the batter using a rubber spatula. Fold until the batter is 1 homogenous color.

  8. SPRAY or wipe the 10 x 3-inch cake tin with vegetable oil, then pour the batter in.

  • ½ cup butter, softened

  • ¾ cup white sugar

  • 1 egg

  • 1 cup and 6 tablespoons all-purpose flour, sifted 

  • 1 teaspoon cream of tartar

  • ½ teaspoon baking soda

  • ⅛ teaspoon salt

  • 1 tablespoon white sugar

  • 1 teaspoon ground cinnamon

Items Needed

  • One 9 x 13-inch baking sheet

Directions

  1. CREAM butter and sugar in a stand mixer on medium high speed until fluffy.

  2. MIX in the egg and vanilla extract.

  3. ADD the flour, cream of tartar, baking soda, and salt to the dough on low speed until fully combined.

  4. FORM 1-inch dough balls, making about 20 cookies. 

  5. COMBINE white sugar and ground cinnamon in a small bowl. 

  6. ROLL the cookies in the cinnamon sugar mixture and place on a baking sheet lined with parchment paper. You will need to work in batches. 

  7. INSERT wire rack at mid position in the Cosori Air Fryer Toaster Oven. Select the Cookies function, set time for 23 minutes, then press Start/Cancel to preheat.

Directions

  1. COMBINE all ingredients for the filling and mix well. 

  2. ADD filling to a greased glass pie pan, then set aside. 

  3. COMBINE all ingredients for the topping, then set aside.

  • 4 eggs

  • 1 orange, juiced and zested

  • ⅓ cup powdered sugar

Directions

  1. MIX together flour, sugar, and baking powder.

  2. MIX eggs, vegetable oil, lemon zest, and orange zest in a separate bowl.

  3. COMBINE dry ingredients with wet ingredients until fully incorporated.

  • ⅔ cup sour cream

  • 1 tablespoon vanilla

  • 4 eggs, whisked

  • One 10-inch springform pan

Directions

  1. COMBINE all graham cracker crust ingredients in the 100-inch springform pan and mix well. 

  2. PRESS the crust firmly into the bottom of the pan to form an even layer, then set aside.

  3. INSERT wire rack at low position in the Cosori Air Fryer Toaster Oven. 

  4. SELECT the Bake function and set time to 45 minutes, then press Start/Cancel to preheat. 

  5. COMBINE cream cheese, sugar, sour cream, and vanilla extract in a stand mixer or kitchen bowl, mixing until smooth and creamy.

Directions

  1. MIX butter, brown sugar, and white sugar in a large bowl until creamy.

  2. ADD eggs and vanilla extract to the butter mixture and mix well. 

  3. STIR in flour, baking powder, baking soda, and salt. Mix until just combined to avoid overmixing. Stir in chocolate chips and walnuts.

  • ½ cup unsweetened cocoa powder

  • 3 tablespoons milk

  • ¼ teaspoon salt

  • 2 teaspoons vanilla extract

Items Needed

  • One 12-cup cupcake tin

  • Cupcake liners

Directions

  1. WHISK flour, cocoa powder, baking soda, baking powder, and salt in a large bowl until well incorporated.

  2. WHISK remaining ingredients for the batter in a separate bowl until combined.

  3. POUR the wet ingredients into the dry ingredients and mix until just combined. Be sure not to overmix as this can make the batter too liquidy.

  • 3 tablespoons butter, room temperature, divided  

  • ¼ cup and 1 tablespoon granulated sugar, divided

  • 2½ tablespoons flour

  • ⅔ cup whole milk yogurt

  • 1 teaspoon salt

  • 1½ teaspoons black pepper, coarse 

  • 2 large egg yolks

  • 2 large egg whites

Items Needed

  • Two 4-ounce ramekins

Directions

  1. BRUSH the bottoms and sides of the ramekins lightly with a tablespoon of butter, right up to the rim. Divide 1 tablespoon of sugar between the ramekins and coat all surfaces, then pour out the excess sugar.

  2. MELT the remaining butter in a saucepan over medium heat. Add flour, yogurt, salt, pepper, and 1/8 cup of sugar, then whisk the mixture until it forms a thick paste.

  3. REMOVE saucepan from heat then transfer the mixture to a bowl. Immediately add egg yolks and mix until fully combined, then set aside. 

  4. WHISK egg whites in a separate bowl until they become frothy. Add the remaining sugar, then whisk again until the egg whites form stiff peaks. 

  5. FOLD egg whites gently into the egg yolk mixture using a rubber spatula. Fold until the mixture is 1 homogenous color. 

  6. DIVIDE the mixture between the ramekins evenly. 

  7. INSERT food tray at low position in the Cosori Air Fryer Toaster Oven. Select the Bake function, set time to 18 minutes and temperature to 375°F, then press Start/Cancel to preheat. 

  8. PLACE ramekins in the preheated air fryer toaster oven, then press Start/Cancel to bake. 

  9. TAKE the souffles out once done baking, then serve immediately.

Chocolate Souffle

  • 2 tablespoons butter, room temperature, divided  

  • 2½ tablespoons sugar, divided

  • 1 tablespoon flour

  • 1/4 cup milk

  • 2 ounces dark chocolate, 70%

  • 2 large egg yolks

  • 2 large egg whites

Items Needed

  • Two 4-ounce ramekins

Directions

  1. BRUSH the insides of the ramekins with 1 tablespoon butter; right up to the rim. Divide 1 tablespoon sugar between the ramekins and coat all surfaces, then pour out the excess sugar.

  2. MELT the remaining butter in a saucepan over medium heat. Add flour and milk, then whisk the mixture until it forms a thick paste.

  3. REMOVE saucepan from heat then transfer into a bowl. Immediately add chocolate into the bowl and mix until the chocolate has fully combined with the paste.

  4. ADD egg yolks and mix to combine. Then set aside.

  5. WHISK egg whites in a separate bowl until they become frothy. Add the remaining sugar, then whisk again until egg whites have formed a stiff peak. 

  6. FOLD egg whites gently into the chocolate batter mixture using a rubber spatula. Fold until mixture is 1 homogenous color. 

  7. DIVIDE the mixture into the prepared ramekins. 

  8. INSERT food tray at low position in the Cosori Air Fryer Toaster Oven. Select the Bake function, set time to 17 minutes and temperature to 375°F, then press Start/Cancel to preheat. 

  9. PLACE chocolate souffles in the preheated air fryer toaster oven, then press Start/Cancel

Baked Apples with Raisins & Pinenuts

  • 2 large Fuji or Honeycrisp apples

  • 1 tablespoon butter, melted

  • 2 teaspoons raisins

  • 2 teaspoons brown sugar

  • ½ teaspoon cinnamon

  • 1 tablespoon pine nuts

Directions

  1. CUT off the top of the apples (about ¾ of an inch), including the stem, and set aside. Core the apples, but don’t cut all the way through. Throw away the seeds.

  2. CHOP the apple innards finely.

  3. COMBINE the chopped apple, melted butter, raisins, brown sugar, cinnamon, and pine nuts in a bowl.

  4. STUFF the cored apples with the mixture in equal parts. 

  5. SELECT the Bake function on the air fryer toaster oven, set time to 40 minutes and temperature to 350°F, then press Start/Cancel to preheat.

  6. LINE the Cosori Air Fryer Toaster Oven’s food tray with parchment paper and place the stuffed apples and their tops on the food tray.

Apple Hand Pies

Ingredients

Dough

  • 1 cup butter

  • 2½ cups all-purpose flour

  • 7 tablespoons water, ice cold

  • 1 egg, whisked

Filling

  • 2 tablespoons butter

  • 2 green apples, peeled, cored & thinly sliced

  • ¼ cup white sugar

  • 2 tablespoons brown sugar

  • 1 tablespoon lemon juice

  • 1 tablespoon cinnamon

  • 1 tablespoon water 

Directions

  1. COMBINE the butter and flour for the dough in a food processor and pulse until it forms crumbles.

  2. ADD the ice water and pulse until fully incorporated. The mixture will still be crumbly.

  3. REMOVE the mixture and knead until it is a mound of dough.

  4. FLATTEN the dough with a rolling pin until it is about ¼-inch-thick.

  5. WRAP in plastic wrap and refrigerate for 20 minutes.

  6. MELT the butter for the filling in a saucepan over medium-high heat for 1 minute.

  7. ADD apples, white sugar, brown sugar, lemon juice, cinnamon, and water to the saucepan. Cook for 10 minutes on medium-high heat or until desired consistency is reached. 

  8. ROLL out the puff pastry dough until it’s about 1/8-inch-thick.

  9. CUT out 6–8 circles that are about 6 inches in diameter using the rim of a bowl or a cookie cutter. Then place ¼ cup of apple filling onto half of each pastry circle.

  10. FOLD the other halves of the pastry circles over the filling and use a fork to press and seal the edges.

  11. BRUSH the surfaces of the hand pies with whisked egg.

  12. SELECT the Bake function on the Cosori Air Fryer Toaster Oven, set time to 25 minutes and temperature to 375°F, then press Start/Cancel to preheat. 

  13. LINE the air fryer toaster oven’s food tray with parchment paper and place the hand pies on top. Insert the food tray at mid position in the preheated air fryer toaster oven, then press Start/Cancel to bake.

Cream Cheese Frosting:

  • ½ cup cream cheese, room temperature

  • 1 cup powdered sugar

  • ½ cup unsalted butter, room temperature

Cinnamon Rolls:

  • 1 cup milk, warm

  • ¼ cup unsalted butter, melted

  • ¼ cup white sugar

  • ½ packet active dry yeast

  • 2⅓ cups all-purpose flour, plus more for dusting

  • ½ teaspoon baking powder

  • 1 teaspoon salt

  • ¼ cup unsalted butter, softened

  • ½ cup dark brown sugar

  • 2½ teaspoons ground cinnamon

Directions

  1. MIX together all the frosting ingredients until well combined and there are no lumps. Set aside.

  2. COMBINE the warm milk, melted butter, white sugar, and active dry yeast in a large bowl and allow to bloom for 1 minute.

  3. MIX in 2 cups all-purpose flour until well combined and cover with a towel for 1 hour and place in a warm area of your house.

  4. MIX in the remaining flour, baking powder, and salt.

  5. KNEAD the dough on a floured surface and roll out to a ¼-inch thickness.

  6. SPREAD the softened butter on the dough, and sprinkle the dark brown sugar and cinnamon on top.

  7. ROLL the cinnamon rolls tightly, beginning at the long edge, until a log of dough has been formed.

  8. CUT the dough into 1 to 1½-inch slices, place onto a lightly buttered sheet pan, and cover with a towel for 30 minutes.

  9. SELECT Preheat on the Cosori Air Fryer, adjust to 330°F, and press Start/Pause.

  10. PLACE the cinnamon rolls on parchment paper and into the preheated air fryer.

  11. COOK the cinnamon rolls at 330°F for 12 minutes.

  12. SPREAD the cream cheese frosting on top when done cooking.

Chocolate Soufflé

Ingredients

  • Butter, for greasing

  • Sugar, for coating

  • 3 ounces bittersweet chocolate, chopped

  • ¼ cup unsalted butter

  • 2 eggs, yolks separated from whites

  • ½ teaspoon pure vanilla extract

  • 2 tablespoons all-purpose flour

  • 3 tablespoons sugar

  • Powdered sugar, for dusting

Directions

  1. GREASE two 6-ounce ramekins with butter. Sprinkle sugar into the ramekins, shaking to spread around, then dumping out the excess.

  2. MELT chocolate and butter together in the microwave in 30 second intervals until the chocolate is fully melted, about 30 seconds to 1 minute.

  3. WHISK the egg yolks and vanilla extract vigorously into the melted chocolate to prevent scrambling. Stir in the flour until there are no lumps and set aside to cool.

  4. BEAT the egg whites in a large bowl with an electric mixer at medium speed until they just hold soft peaks.

  5. ADD the sugar, a little at a time, continuing to beat at medium speed, then increasing to high speed until whites just hold stiff peaks. Set aside.

  6. SELECT Preheat on Cosori Air Fryer, adjust to 330°F, and press Start/Pause.

  7. STIR about ½ of the whites into the chocolate mixture to lighten. Then, add chocolate mixture to the remaining whites, folding gently but thoroughly.

  8. SPOON batter into the ramekins and place into the preheated air fryer.

  9. BAKE the soufflés at 330°F for 13 minutes.

  10. DUST the soufflés with powdered sugar and serve immediately.

Banana Nut Bread

Yields 1 mini loaf

Ingredients

  • ¼ cup unsalted butter, softened

  • ½ cup sugar

  • 1 egg, beaten

  • 2 overripe bananas, mashed

  • ¼ teaspoon vanilla extract

  • ¾ cups all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ⅓ cup chopped walnuts

  • Nonstick cooking spray

Directions

  1. CREAM together the butter and sugar.

  2. MIX in the egg, mashed bananas, and vanilla. Set aside.

  3. SELECT Preheat on the Cosori Air Fryer, adjust to 300°F, and press Start/Pause.

  4. SIFT together the flour, baking soda, and salt.

  5. FOLD the dry ingredients into the wet until combined. Mix in the chopped walnuts.

  6. GREASE 1 mini loaf pan with cooking spray and then fill with batter. Place into the preheated air fryer.

Mini Apple Pies

Ingredients

  • 1 medium apple, peeled & diced into bite-sized pieces

  • 2½ tablespoons granulated sugar

  • 1 tablespoon unsalted butter

  • ½ teaspoon ground cinnamon

  • ⅛ teaspoon ground nutmeg

  • ⅛ teaspoon ground allspice

  • 1 sheet pre-made pie dough

  • 1 egg, beaten

  • 1 teaspoon milk

Directions

  1. COMBINE the diced apples, granulated sugar, butter, cinnamon, nutmeg, and allspice together in a medium saucepan or skillet over low-medium heat. Bring to a simmer.

  2. SIMMER for 2 minutes, then remove from heat.

  3. ALLOW the apples to cool, uncovered at room temperature, for 30 minutes.

  4. CUT the pie dough into 5-inch circles.

  5. ADD the filling to the center of each pie crust circle and use your finger to apply water to the outer ends. Some filling will be left over.

  6. CRIMP the pie shut and cut a small slit on the top.

  7. SELECT Preheat on the Cosori Air Fryer, adjust to 350°F, and press Start/Press.

  8. MIX together the egg and milk to make an egg wash and brush the tops of each pie.

  9. PLACE the pies into the preheated air fryer and cook at 350°F for 10 minutes, until pies are golden brown.

Rustic Pear Tart with Walnuts

Ingredients

Pastry:

  • ¾ cup all-purpose flour, plus ½ tablespoon

  • ¼ teaspoon salt

  • 1 tablespoon granulated sugar

  • 6 tablespoons unsalted butter, cold, cut into ½-inch pieces

  • 2 tablespoons water, ice-cold

  • 1 egg, beaten

  • 1 tablespoon turbinado sugar

  • Nonstick cooking spray

  • 1 tablespoon honey

  • 1½ teaspoons water

  • Toasted walnuts, chopped, for garnish

Filling:

  • 1 large pear, peeled, quartered & thinly sliced

  • 1½ teaspoons cornstarch

  • 2 tablespoons brown sugar

  • ¼ teaspoon ground cinnamon

  • A pinch salt

Directions

  1. MIX the ¾ cup flour, salt, and granulated sugar in a large bowl until well combined.

  2. CUT the butter into the mixture using a pastry blender or food processor until it forms coarse crumbs.

  3. ADD the cold water and mix until it combines.

  4. FORM the dough in a bowl, cover with plastic wrap, and chill in the fridge for 1 hour.

  5. MIX together the filling ingredients in a bowl until well combined.

  6. ROLL out your chilled dough until it is 8½ inches in diameter.

  7. ADD the ½ tablespoon flour onto the top of the pastry leaving 1½ inches unfloured.

  8. LAY the pear slices in decorative, overlapping circles on top of the floured part of the crust. Spoon any remaining pear juice over the slices. Fold the border over the filling.

  9. COVER the borders with beaten egg and sprinkle the turbinado sugar all over the tart. Set aside.

  10. SELECT Preheat on the Cosori Air Fryer, adjust to 350°F, and press Start/Pause.

  11. SPRAY the preheated air fryer with cooking spray and place the tart inside.

  12. SELECT Bread, adjust time to 45 minutes, and press Start/Pause.
