Pie Dough Ingredients
2 sticks (1 cup) butter
2½ cups all-purpose flour
7 tablespoons iced water
1 egg, whisked
2 tablespoons butter
2 green apples, peeled, cored & thinly sliced
¼ cup white sugar
2 tablespoons brown sugar
1 tablespoon lemon juice
1 tablespoon cinnamon
1 tablespoon water
COMBINE the butter and flour in a food processor and pulse until it forms crumbles.
ADD the iced water and salt, and pulse until fully incorporated. Mixture will still be crumbly.
REMOVE the mixture and knead until it is 1 mound of dough.
FLATTEN the dough with a rolling pin until it is about ¼-inch-thick.
WRAP in plastic wrap and store in refrigerator for 20 minutes until ready to use.
PUT butter to a sauce pan and melt on medium-high heat for 1 minute.
ADD apples, white sugar, brown sugar, lemon juice, cinnamon, and water to the saucepan and cook for 8 minutes on medium-high heat or until desired consistency is reached.
ROLL out the puff pastry dough until it’s about ⅛-inch-thick.
CUT out 8-10 circles that are about 6 inches in diameter using the rim of a bowl or a cookie cutter. Then place ¼ cup of apple filling into each pastry circle.
FOLD the dough over to enclose the filling and use a fork to press and seal the edges.
BRUSH the top surface of hand pies with the whisked egg.
PLACE the hand pies into the Cosori Air Fryer baskets. You may need to work in batches.
SET the temperature to 330°F, time to 14 minutes, and press Start/Pause.
ALLOW to rest for 5 minutes in the basket when finished. Then, serve.
