½ teaspoon lemon juice
½ cup coconut milk or soy milk
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¼ cup granulated sugar
3 tablespoons coconut oil, liquidated
1 lemon, zested
½ teaspoon vanilla extract
1 cup fresh blueberries
Nonstick cooking spray
COMBINE lemon juice and coconut milk in a small bowl, then set aside.
MIX together flour, baking powder, baking soda, and salt in a separate bowl and set aside.
BLEND together sugar, coconut oil, lemon zest, and vanilla extract in an additional bowl. Then, combine with coconut-lemon mixture and stir to combine.
MIX your dry mixture into your wet, gradually, until smooth. Gently fold in blueberries.
SELECT Preheat on the Cosori Air Fryer, adjust to 300°F, and press Start/Pause.
GREASE muffin cups with cooking spray and pour batter in until cups are ¾ full.
PLACE the muffin cups carefully into the preheated air fryer. Select Desserts, adjust time to 15 minutes, then press Start/Pause.
REMOVE muffins when done cooking and let them cool down for 10 minutes. Then serve.
