Yields 6-8 servings

2 sticks (1 cup) butter
1 white onion, diced
6 cups frozen corn
3 cups heavy cream
1½ teaspoons salt
Black pepper, to taste
SELECT Sauté/Brown on the Cosori Pressure Cooker, Adjust to “More/High”, and press On/Start.
ADD butter and melt for 1 minute.
ADD in onions and cook for 8 minutes or until translucent.
MIX corn and heavy cream in the pot and let it come to a simmer.
BOIL the mixture for 15 minutes, then press Stop/Cancel.
BLEND with an immersion blender until smooth, if desired.
SEASON with salt and add black pepper to taste. Mix well and serve.
