½ tablespoon olive oil
6 slices bacon, chopped
1 medium onion, chopped
2 garlic cloves, minced
2 pounds sweet potatoes, peeled & chopped
½ teaspoon ground cumin
⅛ teaspoon cayenne pepper
1 tablespoon light brown sugar
4 cups low-sodium chicken broth
Salt & pepper, to taste
Parmesan cheese, grated, for garnish
ADD the olive oil and bacon to the Cosori Pressure Cooker.
SELECT Sauté/Brown, Adjust to “More/High”, and press On/Start.
COOK the bacon until crispy, about 10 to 15 minutes. Drain and set aside.
ADD the onion and cook until slightly caramelized, about 6 minutes.
ADD the garlic and cook for 1 minute.
ADD the sweet potatoes, cumin, cayenne, brown sugar, and chicken broth.
SECURE THE LID on the pressure cooker, making sure the pressure release valve is in the locked position.
SELECT Soup, Adjust to “Less/Low”, and press On/Start.
QUICK RELEASE when done cooking and carefully remove the lid.
BLEND with immersion blender or transfer to a blender in batches and blend until smooth.
SEASON to taste with salt and pepper.
GARNISH with the crispy bacon and grated Parmesan cheese.
